It is essential to know how to choose the right mango. The following are some tips to help you out.
a. Select mangoes based on their scent and not color. Ripened mangoes have a deep, unique aroma which differs from the smell of raw mango. Alphonso mangoes, when raw, are green and ripe mangoes ranging from yellow or orange to red, color is not always a sign of maturity. There are some varieties where ripe mangoes retain their green color. Therefore, avoid mangoes that do not smell good.
b. When shopping for Alphonso mangoes, choose the ones that are not black, marked, or cracked.
c. The new Alphonso mango, on average, is about two inches [4 cm] and weighs 20 pounds [9 to 4 kg] each.
Proper storage is required to ensure that the fruit remains fresh. Storage instructions of mangoes differ according to their variety. Alphonso Mango lasts up to 2-3 weeks. They can be refrigerated for up to three days if the Alphonso mangoes are green and raw. Storing mangoes in a paper bag for a few days to ripen is ideal. Avoid placing them in sunlight until ripened. Once the mangoes are ripened, they can be stored in a cool and dry place.
Alphonso Mangoes can be stored in the freezer too. Exfoliating them darkens their skin, but the inner flesh remains in proper condition.
They can be stored as whole fruit or as slices. Storing these slices in airtight containers or plastic boxes is advised.
Alphonso and Allergies
People with Alphonso allergies usually suffer from a condition called latex allergy. This condition leads to an itchy and dry mouth when someone with the allergy consumes an Alphonso mango.
